Have you ever been offered scrambled eggs at 30.000 ft knowing that said eggs had been cooked a day earlier? Yuck. It happened to me many years ago aboard a Lufthansa flight to the very far East. I dreaded the alternative offering so I took the eggs. The eggs were served with a reddish concoction I identified as a combination of onions and tomato. The mixture was very enjoyable and I subsequently created what I then called Lufthansa onions. Here is the recipe.

  • 3 thinly-sliced onions
  • 3 or 4 tablespoons of tomato paste
  • 3 tablespoons of olive oil
  • shot of Tabasco

Add the olive oil to a skillet and heat. Add the sliced onions, stirring frequently until they are golden in color. Add tomato paste and the optional shot (or three) of Tabasco. Done. Serve lukewarm or cold.

The resulting reddish mess tastes delicious with eggs, on white bread, with cheese, and with barbecued meats.
